      1. Carrot Pudding - Gajar Halva
        1. Ingredients
          1. 6 medium carrots, shredded
          2. 2 cups milk
          3. 1/2 cup packed brown sugar
          4. 1/2 cup golden raisin
          5. 1/4 cup butter or margarine
          6. 1/2 teaspoon ground cardamom
          7. 1/4 teaspoon salt
        2. Directions
          1. heat carrots and milk to a boil in saucepan
          2. reduce heat
          3. simmer, stir often until all milk is absorbed ~ 45 minutes - 1 hr 30 mins
          4. add brown sugar, raisins, butter, cardamom and salt
          5. cook over low heat, stir constantly until brown sugar disolves and desired consistency is achieved ~ 15 minutes
          6. garnish with pistachios or slivered almonds
          7. serve warm
