Carrot Pudding - Gajar Halva

Ingredients
- 6 medium carrots, shredded
- 2 cups milk
- 1/2 cup packed brown sugar
- 1/2 cup golden raisin
- 1/4 cup butter or margarine
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon salt

Directions
- heat carrots and milk to a boil in saucepan
- reduce heat
- simmer, stir often until all milk is absorbed ~ 45 minutes - 1 hr 30 mins
- add brown sugar, raisins, butter, cardamom and salt
- cook over low heat, stir constantly until brown sugar disolves and desired consistency is achieved ~ 15 minutes
- garnish with pistachios or slivered almonds
- serve warm
